My Baking and Buttercream class was everything I was hoping for! It was great! I learned so much in such a short time. The class really took my self-taught baking skills to the next level. I learned the functions of main ingredients in cake baking. I also learned some trouble shooting for cake baking too. For example; Cracked or peaked surfaces, means oven is too hot or batter is over mixed. Our instructor, Micheal Smith had all the answers.
The main cake we learned from scratch was the vanilla bean recipe, with swiss meringue buttercream for filling and masking (also known as crumb coat) your cake for fondant. Did you know that you should mask your cake twice before applying your fondant? I didn't know, till now!!!
We also learned how to make Buttermilk Chocolate cupcakes, Lemon cupcakes, and Almond cupcakes! Once cupcakes were done we were able to eat them up! Yum!
I don't want to toot my own horn but I think I did a pretty great job at masking my cake. Even the instructor was impressed.
I enjoyed the class so much I can't wait to take the next, DC1: Introduction to Cake Decorating.
