Mini Chocolate Chip Cookie Pies

I'm a little late on posting this but on Monday it was my bosses first day back from a year long maternity leave. To celebrate her return I made her Mini Chocolate Chip Cookie Pies! The recipe came from Bakerella (where else!?). It looked to good to pass up. Now I know Bakerella's recipe calls for one 12" pie, but I thought it would be more fun to have 12 mini 3" pies to share!


Mini Chocolate Chip Cookie Pie

1 package of 12 unbaked 3-inch pie shells (thaw completely)
1 large eggs
1/4 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/2 cup butter, softened
1/2 cup milk chocolate morsels
1/2 cup chopped pecans
Serve with ice cream (optional)

Preheat oven 325 degrees F.
Beat egg in large mixer bowl on high until foamy.
Beat in flour, granulated sugar and brown sugar. Beat in butter.
Stir in morsels and nuts and spoon into pie shell.
Bake for 20-25 minutes. Cool on wire rack. Serve warm.

I had an extra mini pie and before I knew it Denis ate it up! Right before I could take a picture of it. ha!
To jazz up the remaining 11, I made pink buttercream and piped a letter on each mini pie to spell 'Welcome Back'
