Bird's Nest Cookie Cupcakes! Yum!

I saw this recipe to make Bird's Nest Cookies using butterscotch morsels, chow mein noodles and egg-shaped candies over at Tip Junkie that I had to try for this Easter weekend. But of course I had to adapt the recipe to my liking...
For example: instead of butterscotch I used milk chocolate and instead of leaving them as cookies I used them as toppers for my chocolate cupcakes!! I loved the idea of using chow mein noodles but you could also use pretzels.

Makes 2 1/2 dozen cookies

12 oz. package chow mein noodles
12 oz. package milk chocolate morsels
90 egg-shaped candies

Line a baking sheet with parchment paper or silicone baking mat. Pour the milk chocolate morsels in a microwave-safe bowl and place them in the microwave. Heat for 30 seconds then remove to stir. Return to the microwave and heat again for 30 seconds. Stir until melted. Add in the chow mein noodles and mix till combined. Use a 1/4 measuring cup to portion out the cookies onto the baking sheet. If the mixture starts to solidify in the mixing bowl, you can reheat for 15 to 30 seconds to melt. Place three egg-shaped candies in the center of each cookie. Allow to set for at least 5 minutes before serving or transferring.
For the cupcakes I just made your everyday chocolate cupcake recipe and piped on some green vanilla buttercream icing. Once the cookies were set I transferred them onto the iced cupcakes.
I had to make mini cupcakes too!!
