Best Brownies EVER!

It was a sad day at work today. My good friend Peter has moved on to bigger and better things and to make his last day the best, I baked the best brownies ever! Well that's what I was told.

Here's the recipe:

1 cup butter, melted
12 Tbsp cocoa powder added to melted butter
2 cups sugar
4 eggs
1 tsp baking powder
1 tsp salt
1 tsp vanilla
1 cups flour
1 cup chocolate chips (more or less according to taste)
1 cup of pecans (optional)

Preheat oven to 350° F. Mix all ingredients together in large mixing bowl. Sprinkle some flour into bottom of 9" by 13” inch pan, pour in batter, and bake for about 25 minutes. When cooled, whip up some chocolate ganache (recipe below). Pour it on top and spread it out evenly. Now, this is the hardest step. Leave it alone. That’s right, you’ll want to let the ganache set up. It will be tough, but you can do it. I also sprinkled pecans on top.

Chocolate Ganache

12 oz. semi-sweet chocolate morsels

3/4 cup heavy whipping cream

6 Tbsp butter

In a small saucepan, heat cream and butter until just before the boiling stage. Pour over the chocolate morsels. Let stand about 20 seconds and stir until smooth.

Enjoy...I know I did!
